Cooked cured meat, coming from the country tradition. It is prepared by boiling noble cuts and poorer parts of the pig, which are then chosen and cut by hand.
After being seasoned and spiced those are then bagged by hand into a special cloth and left to rest to cool down.
The result is a product with a delicate and particular taste, pleasantly spicy aftertaste, perfect both as a cured meat and as a “carpaccio”.

Ingredients and storage

Pork, salt, pepper and natural flavors.

The product can be kept refrigerated between 0°- 4° C, covered by cling film on the sliced side.

Details and advices

“Migliorati” Coppa di Testa is an exclusive product, made also with noble parts, therefore the percentage of meat is much higher than in any other “coppa di testa”. It can be enjoyed as a cured meat, sliced on the bread, or in small pieces for a classy aperitif. Excellent as a carpaccio , maybe seasoned with oil and marinated onion cut à la julienne.
